    The concept of the chef’s table originated from an age-old practice of chefs entertaining their family and friends in the kitchen as they worked. If space allowed, they sat at a small table tucked in an out-of-the-way corner.

    In time, enterprising restaurateurs began granting their regular patrons the opportunity to walk through the swinging doors for a behind-the-scenes dinner in the kitchen.  What was once an invitation-only VIP perk eventually evolved into a fully bookable table for the general public.

    The Nómada Anniversary Chef’s Table Limited Event on 14th April gave guests the opportunity to interact with Peruvian born chef Andre Josef Nweh Severino.  Chef Andre has spent over 20 years living in Argentina with around fourteen of these years cooking and embracing the cuisine of that country.

     

    His appointment as chef at the Nómada Open Fire Grill & Beach Club began over a year ago with the restaurant’s transformation to become the exciting beachside dining experience at Dusit Thani Hua Hin Resort.  This is where the rich culture of South America is now on show, embracing traditional grilling done the South American way.  This is Chef Andre’s first Asian experience, but he is now relishing the opportunity to embrace both the culture and flavours of Thailand.

    Chef Andre works with local farmers and fishers to deliver compelling fare cooked in different ways — from authentic South American dishes that follow traditional recipes, like ceviche, to fresh meats and seafood grilled over an open flame.

     

    The Chef’s Table was the perfect way to bring people together to celebrate the connection between different food cultures and local ingredients with Chef Andre sharing memoirs of his rich South American heritage and passion for food.

    Diners at the Nómada Anniversary Limited Event experienced a menu carefully selected by Chef Andre with local delicacies and produce given a traditional South American touch and handpicked matching wines served under the expert stewardship of Khun Charuk Chochan.

    The Nómada Anniversary Chef’s Table Limited Event was an exclusive once-off event but the opportunity to savour the South American influenced flavours can be booked for dinner every night from 6.30 PM.

    Chances are that Chef Andre will then be able to make your dinner even more special ss he’s always more than happy to talk about what’s on offer at your table!

    Tequinos are Peruvian-style deep fried pastry dough, with a fine crust containing a filling of premium seafood with house-made purple olive sauce.

    Fish A Lo Macho combines the fresh flavours of locally caught fish with Chef Andre’s own blend of exotic flavours from the coastal regions of Peru.

    Lobster in Huancaina Saurce: Locally caught lobster with the succulent meat smothered in Huancaina sauce, a creamy cheese sauce, blending aji peppers, queso fresco, and onions, originating from the Andean Huancayo region of Peru.
